Varieties: 50% Callet, Fogoneu, 30% Syrah, 10% Cabernet, 10% Merlot.
Appearance: Clear deep ruby.
Nose: Clean pronounced aromas of black fruit, minerals & toast.
Palate: Ripe, dark fruit on the palate. Well-structured, complex & balanced.
Vinification: Grown with minimal intervention, from incredibly rare, almost extinct varietals. Hand harvested & fermented in stainless steel, aged nine months in foudre.
Recommended Food Pairing: Grilled eggplant & lamb skewers.
