Variety: 100% Merenzao (aka Trousseau).
Appearance: Clear, medium-ruby.
Nose: Clean, refreshing notes of berry bush, floral spice, and minerals.
Palate: Dry, medium-light in body. The oak is integrated making this a soft-tannin, lip-smacking stunner that is easy to please.
Vinification: Practicing organic on all estate-owned 80-year old vines from a single plot named Risco (after the previous owner) on pure schist with very steep inclines. Merenzao is the local name for this grape which is known as Trousseau in France and Bastardo in Portugal. Wild yeast fermentation & the grapes are foot trodden in large oak fermentation vats. Aged in old French oak barrels for 12 months and 12 months in bottle. 2,000 bottle production.
Recommended Food Pairing: Beautiful on it’s own, also with a slight chill this is lovely with roasted game, Thanksgiving meals, and vegetarian cuisine.
