  • Variety: 85% Sousón, (some blending with Brancellao, Ferrol & Caiño Longo). Appearance: Clear. Deep ruby with a maroon rim. Nose: Clean. Medium intense forest fruit & subtle, chalky minerality. Palate: Dry. Medium bodied with good acidity & a salty, mineral note. Vinification: Biodynamic. From hand harvested, table sorted & selected fruit. Fermented with natural yeasts & aged 4 months in barrel. Recommended Food Pairing: Roast chicken with parsley.
