Variety: Palomino Fino.
Appearance: Clear. Medium lemon with fine effervescense.
Nose: Clean. Medium intense autolytic notes, a yeasty bouquet.
Palate: Dry. Medium bodied with good texture, bright acidity & a long, clean finish.
Vinification: Fermented & aged in stainless steel, where it undergoes biological aging for 5 months before being transferred to demijons. After an additional 5 months of biological aging in demijons, the wine is bottled & aged on its lees for 15 months.
Recommended Food Pairing: Jamón iberico de bellota.
