  • Varieties: 93% Palomino Fino & 7% Tintilla de Rota. Appearance: Clear. Pink. Nose: Clean. Medium intense cherry notes with subtle brioche. Palate: Dry. Medium bodied with good acidity & a subtle, complex finish. Vinification: Produced with palomino fino sourced from vineyards in Sanlucar de Barrameda. Fermented & aged in stainless steel for a few months before being transferred to demijons where it undergoes biological aging. It is then bottled, undergoes second fermentation & is disgorged a year later without filtering, clarifying or addition of sulfur. Recommended Food Pairing: Creamy cow's milk cheeses, like Mahon.
