Appearance: Clear. Medium ruby with a garnet rim.
Nose: Clean. Pronounced stewed cherry aromas with subtle herbaceous & spiced notes.
Palate: Dry. Medium bodied with juicy, preserved red fruit flavors, vibrant acidity & soft tannins.
Vinification: Hand harvested from two hectares of younger, organically farmed vines that are separated into three different plots. Hand harvested & selected before being fermented in whole clusters in stainless steel with 5 days skin contact. Aged 12 months in used French oak, where spontaneous malolactic fermentation occurs, before being bottled slightly filtered.
Recommended Food Pairing: Grilled sweetbreads.
