Palate: Dry. Medium (+) bodied. Openes up and transforms from red-fruit, light acidity, sweet tannins, to softer blue/black fruit, earthy plums, violets, and cocoa. A unique and fresh wine from Toro.
Vinification: Organic. Harvest over 45 day period for site selection amongst 20-100 year old vines. Each parcel is fermented in old barrels for 5-6 months. Everything is done in the cellar by gravity only (no pumps).
Recommended Food Pairing: Chorizo and Morcilla grilled on the BBQ.
