  • Variety: Mencía. Appearance: Clear. Ruby with purple tones. Nose: Clean. Medium intense red fruit & licorice aromas with subtle floral notes. Palate: Dry. Medium-bodied with a bitter cherry pit note, great acidity & a white pepper, gravel-like minerality on its finish. Vinification: Fermented with indigenous yeasts in concrete tank & used French oak. Rested for 7 months in both oak & concrete, where malolactic fermentation occured. Bottled unfined & unfiltered. Recommended Food Pairing: Roast chicken seasoned with thyme & dijon.
