Palate: Dry. Medium bodied with concentrated, ripe red fruit flavors & balanced acidity.
Vinification: Sustainable. From vines up to 100-years-old planted in quartzite & red clay at altitudes of up to 3800 feet in the south eastern most area of Calatayud. Destemmed, cold macerated & fermented in stainless steel.
Recommended Food Pairing: Roast venison.
