Varieties: Trepat & Pinot Noir.
Appearance: Clear. Dark pink with fine bubbles.
Nose: Clean. Medium intense strawberry & cherry notes on the nose.
Palate: Dry. Medium bodied with red fruit notes, vibrant acidity & good minerality.
Vinification: From organically farmed, estate owned fruit. Macerated for hours obtain a darker than typical rosé. Second fermentation lasts up to 12 months on its lees. Produced with only 6 grams of sugar per liter, making for a dryer brut.
Recommended Food Pairing: Duck Terrine Mousquetaire, a classic country-style terrine made with duck, figs & Armagnac.
