Appearance: Clear. Deep ruby.
Nose: Clean. Medium-intense red fruit with a wet clay note.
Palate: Dry. Medium-bodied with pure, precise fruit & great acidity throughout.
Vinification: From only 2 (used) French oak barrels, aged for 12 months. Produced without sulphites. From an 80-year-old strain of sumoll from Castelladral produced with minimal intervention. No added SO2, and 720 bottles total production.
Recommended Food Pairing: Roasts & stews.
