Variety: 92% Garnacha & 8% Syrah.
Appearance: Clear. Deep ruby.
Nose: Clean. Medium intense red fruit notes; cherry & raspberry aromas.
Palate: Dry. Medium bodied with a palate reflective of the nose complicated by savory, meaty minerality.
Vinification: Organic. From biodynamically farmed vines located in Castello, Valencia. Fermented in whole clusters, in polyethylene vats then aged in 300L French barriques for about 8-9 months. Bottled unfined & unfiltered without additional SO2.
Recommended Food Pairing: Sobrassada; a cured sausage made of ground pork, paprika & other spices.
