Appearance: Deep salmon with subtle effervescence.
Nose: Clean. Medium intense raspberry & blackberry aromas.
Palate: Dry. Medium bodied with subtle black fruit, good acidity & subtle, lingering bitterness on the finish.
Vinification: A subtly sparkling wine produced in the Ancestral method from an indigenous variety to the Penedés which had faced near extinction until just a number of years ago. The initial fermentation is stopped, the wine then undergoes a secondary fermentation in bottle without dosage, is aged 10 months in bottle & left without disgorgement or filtrations.
Recommended Food Pairing: Crispy, deep fried chicken.
