Variety: Sumoll Blanc.
Appearance: Clear. Deep lemon approaching gold with brilliant reflections.
Nose: Clean. Pronounced aromatically with stone fruit & minerality, or as Jancis describes the variety "not unlike Chablis in character."
Palate: Dry. Medium bodied with subtle stone & orchard fruit notes, fine acidity & crunchy minerality.
Vinification: Produced from organically farmed, 80-year-old vines planted in stony white clay soil. Hand harvested & fermented in amphorae of varying sizes to a wonderfully low alcohol level.
Recommended Food Pairing: Mushroom dishes.
