Variety: Palomino Fino.
Appearance: Clear. Deep gold in color with brilliant reflections.
Nose: Clean. Pronounced, a yeast-like bouquet from aging beneath “flor.” Notes of dried fruit & noble wood.
Palate: Dry & lively on the palate, with a very long, aromatic & well-structured finish. Highly concentrated, complex, intense & warming. Medium (+) bodied.
Vinification: A limited production, from the first 16 sherry butts owned by the founder of Gonzalez Byass.
Recommended Food Pairing: Parmesan & other mature cheeses.
