Variety: 100% Listan Blanco.
Appearance: Clear-hazy straw hued.
Nose: Clean, light, mildly nutty and saline.
Palate: Dry, clean, intense crushed granite minerality, salinity, chalky aromatics, and taught linear white citrus tension. Greater concentration than previous releases like Taganan Blanco, and a denser, fleshier textural breadth. Picante and pithy, with beguiling dried tangerine peel, the palate has, as Greg Sherwood MW says, “mesmerising mineral austerity.”
Vinification: Sourced from old-vine, untrained pie franco parcels of Listan Blanco atop the western cliffs of Tenerife. Each parcel is hand-harvested and vinified separately, 60% in concrete and 40% old barrels. Maceration is 10 days cool or 40 days warm (depending on parcel) with 15% skin contact and raised 8 months without battonage or added SO2. Bottling is without fining or filtration.
