Vinification: Grown 450 meters in altitude and highly influenced by the Mediterranean making for a soft, gentle microclimate which shows in the wine. From 65-year-old vines, planted in a single-vineyard with clay & gravel soils. Spontaneously fermented in oak vats, aged in French barrels and Hungarian oak for 10-11 months. Shows potential for aging.
Recommended Food Pairing: Aged cheeses.
