Variety: Pedro Ximénez.
Appearance: Clear. Brown with viscous legs.
Nose: Clean. Pronounced with delicate, subtle herbaceous notes under fig & molasses aromas.
Palate: Sweet. Full-bodied, lush & syrupy with candied notes of coffee & figs, honeyed raisins & oranges. There are also saline & herbal qualities, with a long finish.
Vinification: From a family-owned bodega originally established in the 18th Century, located in Puerto de Santa Maria. A wine of unique character reintroduced in the 90's from a solera of unknown age.
Recommended Food Pairing: La Peral blue cheese.
