Palate: Dry. Medium bodied with pronounced acidity, good tannins & minerality.
Vinification: Hand harvested from organically farmed 80-year-old vines. Destemmed & fermented with native yeasts. Aged 12 months in used French oak without any addition of SO2.
Recommended Food Pairing: Herb-crusted roast beef with horseradish cream.
