Nose: Clean. Pronounced. Ripe pear, peach & apricot on a mineral background.
Palate: Dry. Full-bodied. Deep, with well-integrated effervescence. Fresh & persistent with good acidity.
Vinification: From a 5-hectare estate with soils composed of clay & sand. Aged 160 months in cellar & manually disgorged.
Recommended Food Pairing: Sheep cheese.
