Variety: Palomino Fino.
Appearance: Clear. Deep lemon.
Nose: Clean. Pronounced. Herbaceous & floral scents; Chamomile & dried flowers on a bed of slightly toasted notes.
Palate: Dry. Medium-bodied. Fresh with a salty tang & hints of citrus. Refreshing with excellent, chalky minerality.
Vinification: Bottled with a slight filtration from the cask; from a solera whose wine averages five years in age. The En Rama version of the most popular Sherry. This wine is bottled twice a year when the flor is at its thickest, in the Spring & Fall.
Recommended Food Pairing: Olives or tapas.
