Varieties: 50% Xarello & 50% Xarello Vermell.
Appearance: Clear. Gold with fine bubbles.
Nose: Clean. Pronounced baked apple, hazelnut, rosemary notes along with honey on the nose.
Palate: Dry. Medium-bodied. Citrusy lemon peel, sweet creamed butter flavors, excellent minerality & a lingering finish.
Vinification: Organically grown, bio-dynamically farmed. Fermented with native yeast in amphorae & neutral bottles. Secondary fermentation in bottle, without any added SO2. Aged 60 months in bottle. Only 1,400 bottles produced.
Recommended Food Pairing: Chicken in a garllic-almond sauce.
