Variety: 100% Verdejo.
Appearance: Hazy deep saffron gold.
Nose: Pronounced and quite aromatic - ripe white fruit and stone fruit stand out, with notes of flowers and citrus.
Palate: Quite distinct! As winemaker Ismael says, “for those of us who like wine and we want new experiences!”
Vinification: Completely a natural wine. Pre-phylloxera and ungrafted vines from sandy soils in Nieva (Segovia). Fermented with native yeasts in stainless steel deposits, working with the musts and the fermentation by adding fresh grapes at different days through the weeks of harvest. Once the fermentation has ended, it is left to rest for 3 months in the same deposits with its lees, without pumping-overs nor batonnage, to preserve the reduction. It is bottled without added sulphites. Only 650 bottles made.
