  • Variety: Sumoll. Appearance: Clear. Garnet. Nose: Clean. An earthy nose with subtle floral hints. Palate: Dry. Medium-bodied with Bing cherry pit & red licorice notes with excellent acidity throughout. Vinification: Hand harvested from organically farmed vines planted in 1949 in clay calcareous soil with a loamy texture. Fermented in stainless steel with 12 days of maceration & aged in concrete. Recommended Food Pairing: Grilled meat, bluefish & sardines.
