Variety: Cartoixà Vermell (Red Xarello)
Appearance: Opaque, pale pink.
Nose: Clean, mellow, subtle notes of herbs.
Palate: Dry. Medium-light in body. Delicate notes of citrus peel, dehydrated wild strawberry, spices, floral herbs, and clean on the finish.
Vinification: Hand harvested with spontaneous fermentation. Foot trodden and macerated for over 2 months in tank. Bottled without any types of additives, filtrations or clarifications. No sulfites, organically farmed.
Recommended Food Pairing: Oven-roasted turkey sandwiches, prawns and gambas with chili oil, fire-roasted bass or cold cucumber salads.
