Nose: Clean, pronounced. Elegant aromas of nuts, vanilla & old wood.
Palate: Dry. Medium-bodied with nutty flavors; dried fruit, vanilla, hazelnut & white chocolate on the palate.
Vinification: Produced from 25-year-old Palomino vines grown in chalk-rich albariza soils. Five years of biological aging under flor before completing its oxidative cycle, which is unusual for a Palo Cortado. A treat for any sherry lover to taste as this is incredibly rare and limited release.
Recommended Food Pairing: Smoked duck.
