Variety: Palomino Fino.
Appearance: Clear. Amber in color
Nose: Clean. Pronounced. Toasted almond aroma & a note of bitter orange zest.
Palate: Dry. Medium (+) bodied. Surprisingly bone dry & savory. Notes of roasted hazelnut & walnut brittle, with a hint of clove. A finish that is at once elegant, persistent & spicy.
Vinification: This sherry is from an underappreciated, family owned winery founded in 1838. Fortified in a lighter style & about 7 years old.
Recommended Food Pairing: Dried fruit, figs, raisins & dates.
