Variety: 98% Palomino Fino & 2% Pedro Ximénez.
Appearance: Clear. Dark tawny colored.
Nose: Clean. Pronounced toffee & roasted coffee notes.
Palate: Full-bodied. Off-dry with a depth of complex flavors & strong acidity balanced by sweetness. Slightly bitter on the finish.
Vinification: From a solera founded in 1792, this wine is a minimum of 30 years old but most likely twice that age. Produced in small quantities, only 1500 bottles each year.
Recommended Food Pairing: Fatty foods or curried dishes.
