Appearance: Clear. Medium ruby with brilliant reflections.
Nose: Clean. Pronounced fresh red fruit, floral notes & incense.
Palate: Dry. Medium bodied with subtle red fruit, pronounced, angular & saline mineral notes.
Vinification: Hand harvested from sustainably farmed vines up to 180-years-old planted in clay loam, volcanic soils. Fermented with native yeasts in stainless steel & aged 8 months in concrete & used French oak.
Recommended Food Pairing: Conejo al salmorejo, rabbit stew with tomatoes served with potato "arrugadas".
