Nose: Clean. A gentle, medium-intense, delicate nose. Yeasty, with bread notes.
Palate: Dry. Full-bodied. Elegant with buttery notes of pear & honeysuckle with great mineral. Toasty soft & elegant.
Vinification: From sustainably farmed vines, over 100-years-old planted in sandy, volcanic soil. Hand harvested, whole-cluster pressed & fermented in 500L French oak with indigenous yeasts. Aged 10 months on its lees in 500L French oak.
Recommended Food Pairing: Pair adventurously with a smoked trout chowder, or curried squash & pear bisque.
