Palate: Dry, with an immediate freshness & elegantly fine bubbles. Smooth, voluptuously full-bodied with good acidity. Vinification: Produced with organically grown, estate-owned fruit, from 90-year-old Xarel.lo vines. Aged for a minimum of 3 years on its lees. Recommended Food Pairing: Poultry & white meat.
