Appearance: Clear. Deep ruby, garnet.
Nose: Clean. Pronounced ripe fruit aromas. Raspberry, cherry, balsamic, minerals & notes of toasted oak.
Palate: Dry. Full-bodied- powerful, rich, deep. A great presence of fruit & toasted oak, spices & mineral notes. Good acidity, with a long finish.
Vinification: Hand harvested from nearly 90-year-old vines, whole-cluster fermented with natural yeasts in vats after a 2-week maceration. Aged 24 months in foudre.
Recommended Food Pairing: Slow roast shoulder of lamb.
