Nose: Clean. Pronounced & expressive notes of apple & pear with a lemon-like edge.
Palate: Dry. Full-bodied. Fresh acidity & clean, noble oxidative notes with excellent minerality.
Vinification: From grapes grown in three separate soil types; slate, riverbed soil & clay. Farmed biodynamically. Fermented in inert tanks & aged in larger foudres.
Recommended Food Pairing: Merluza a la Vasca (Hake steak in a parsley sauce).
