Variety: Palomino Fino.
Appearance: Clear. Tawny.
Nose: Clean. Notes of hazelnut, iron & orange marmalade.
Palate: Dry. Medium-bodied & very concentrated, with a lingering finish.
Vinification: A single vintage sherry from a specific cask. Bottled by a newer bodega, located in Jerez, started in 1998 with stocks of wine from the oldest bodega in the sherry region, Bodega CZ – J.M. Rivero. An extremely limited Palo Cortado, only 250 bottles have been filled. (We also have one Magnum of this in stock, see site for details).
Recommended Food Pairing: Crispy duck, Cochinillo, or jamón ibérico.
