Variety: Pedro Ximénez.
Appearance: Clear. Deep tawny, brown in color.
Nose: Clear. Pronounced lactic notes, coffee & toasted aromas of cappuccino.
Palate: Off-dry. Full-bodied & dense with fig & chestnut notes. The aftertaste is long & reminiscent of dark chocolate. Sweet & concentrated but balanced.
Vinification: Produced from raisinated grapes grown in albariza soil, sun-dried on mats. Aged in a solera founded in 1902, with wine on average 30-years-old. From one of the oldest sherry bodegas in Spain.
Recommended Food Pairing: After the meal with a cheese plate or a favorite cigar on the balcony.
