Nose: Clean, and subtle with notes of apricots and stone fruit skins.
Palate: Dry, not too reductive or volatile. Poetically rich, subtle, boisterously flavorful and idiosyncratically personal wines (quoted from Thirst Wine Merchants). Well balanced with some tannin but clean on the finish.
Vinification: Fabio Bartolomei is making exceptional wines by following a simple formula: do nothing unnecessary in the vineyard or the cellar and let the wines guide their own evolution.
Recommended Food Pairing: Korean & Japanese food, roasted pork dishes, and oily noodles.
