Nose: Pronounced notes of earth and spice. Some dark cherries and pepper.
Palate: Dry, medium-bodied. Crushed black and purple berry flavors mingle with rich herbal licorice and cracked black pepper, laced with cola.
Vinification: Completely organically and naturally produced. Vines planted in 1960s on granitic soils of the Gredos mountains outside of Madrid. Fermented in stainless and racked into four old 225L barrels and one old 500L barrel. Zero Sulfur added.
Recommended Food Pairing: Ribs, veal meatballs, or oxtail stew.
