Nose: Clean. Medium intense apple & pear aromas with subtle, nutty minerality.
Palate: Dry. Medium bodied & textured with good concentration of citrus notes & vibrant acidity.
Vinification: Produced from a single vineyard of 60-year-old organically farmed, estate owned Xarello vines. Fermented with native yeasts in the Ancestral method with one-day maceration. Bottled without additional sulfur & aged six months.
Recommended Food Pairing: Escalivada, a grilled vegetable dish served with olive oil.
