Nose: Clean medium citrus aromas, hints of lemon & pear.
Palate: Citrus flavors with chalky minerality. Dry, light on the palate & slightly effervescent.
Vinification: Made using the ancestral method, which calls for bottling before fermentation is complete, allowing for the formation of bubbles from the remaining yeasts & sugar. Racked for five months disgorged by hand & topped off without added dosage, but instead the same wine.
Recommended Food Pairing: Drink on its own.
