Nose: Clean and intense aromas of pear, banana & pineapple.
Palate: Dry. Medium-bodied with fairly high acidity, white fruit & citrus flavors. Very tropical and show-stopping.
Vinification: Alvar de Dios is changing the way we think of wine from, and around, Toro. This is a vitrual kitchen-sink of grapes all from one very tiny 0.5 hectare plot. All organic fruit. Hand harvested, co-fermented in neutral French oak & aged in barrel, on its lees for 12 months.
Recommended Food Pairing: Mixed grilled vegetables of a spicy Thai noodle dish.
