Varieties: A blend of Tempranillo, Graciano, Mazuelo and Garnacha.
Appearance: Clear, medium ruby.
Nose: Attractive aromas of black cherry and cola, lavender and spice, raspberry and minerals.
Palate: Dry, medium+ bodied. Vibrant and very complex on the palate, with loads of black cherries, licorice, cola and mineral flavor. Fine yet very persistent tannins, terrific acidity and a beautiful lift of fresh-cut herbs. Great length of finish and multi-layered complexity, a beautiful wine.
Vinification: The soils are shallow, stony, silty chalk-clay at an altitude of 540-630mt. Only 2.7 hectares of vines. The wines are naturally fermented in 3-4,000 liter open wooden casks, and aged 14 months in 1500 liter foudre. 2,000 bottles were made in 2014, the first release of Tabuerniga.
Recommended Food Pairing: Elegant enough to serve with duck, fatty fish or salmon, roasted chicken.
