  • Varieties: Tempranillo, Cariñena, Bruñal, Bobal, Albillo, etc. 

    Appearance: Clear, deep ruby. 

    Nose: Clean, pronounced floral and deep red fruit notes. Hinting on toast and spice. 

    Palate: Dry, full-bodied. Robust rich fruits, silky and palate coating with dark berries. Spicy toast notes and an incredibly long finish. 

    Vinification: Organic with biodynamic practices on 100–150 year old vines from sandy, chalky, decomposed limestone soils. Hand harvested, whole cluster natural yeast fermentation in concrete, pigeage by foot. Non-destemmed grapes, trodden with the feet, malolactic fermentation in oak barrels, not clarified, not fined. 35 months in oak barrels. From a single vineyard located in the village of La Aguilera. This south-facing site is planted with ungrafted vines that date back well into the 19th century. Each vintage is labeled to reflect the growing conditions of the particular year – the blue, electric guitar for a cool vintage. Translates literally as “partridge sings.” Production: 1.979 bottles, 51 magnum. 

    Recommended Food Pairing: Pluma Iberica or other pork roasts.
