Appearance: Clear. Deep lemon with brilliant, gold reflections.
Nose: Clean. Pronounced aromas of ripe, white fruit, citrus & fresh flowers.
Palate: Dry. Full-bodied. Creamy textured from oak aging, balanced by good acidity. The palate is complex with herb and savory notes. For those that love Burgundy, specifically a Puligny Montrachet, with that nervous taught tension and a hard to miss lengthy finish that is both distantly influenced by oak barrels yet still racy enough to dance down the tongue, this wine is for you.
Vinification: Organic. From 80 to 100-year-old vines spread over three farms in Catalonia. Hand harvested & spontaneously fermented in stainless steel with spontaneous malolactic fermentation in barrel.
Recommended Food Pairing: Simply prepared scallops or codfish.
