Jerez bodega consultant Ramiro Ibáñez has his own project, Cota 45, created to foster his vision of unique Jerez terroir expression of the past.  This unfortified white wine is singular in that it is unusually comprised of almost extinct varietals such as perruno, uva rey, and of course palomino fino.
