Nose: Clean. Fresh, with hints of salinity, minerals and citrus-stones.
Palate: Dry. Perfectly crisp and clean on the palate. Kaffir lime, citrus zest, crushed stones and a hint of sea salt.
Vinification: Noelia de Paz, protege of the great Raul Perez, is finally making some small production wines of her own in Galicia. All hand-harvested grapes fermented in stainless steel with a few months of fine lees contact.
Recommended Food Pairing: Perfect for aperitif, seafood, and fresh mussels & clams.
