Variety: Mencía. Appearance: Clear. Ruby with purple tones. Nose: Clean. Medium intense red fruit & licorice aromas with subtle floral notes. Palate: Dry. Medium-bodied with a bitter cherry pit note, great acidity & a white pepper, gravel-like minerality on its finish. Vinification: Fermented with indigenous yeasts in concrete tank & used French oak. Rested for 7 months in both oak & concrete, where malolactic fermentation occured. Bottled unfined & unfiltered. One of the most dynamic natural producers in Bierzo making incredible, chillable, red (and also orange) wines. Recommended Food Pairing: Roast chicken seasoned with thyme & dijon. For the 1984 cuvée, he sources from 3 old-vine vineyards in the hills of Priaranza delBierzo, in the southwest part of the appellation. These 100% Mencía parcels wereharvested by hand in mid-September, the grapes were destemmed and macerated for 3-4days in open-top, used French oak casks. The wine was then transferred to small Frenchoak barrels to finish primary and malolactic fermentation, then age for 7-9 monthswithout racking. The finished wine was bottled without fining, filtration or added SO2. This is amazingly fresh and engaging Bierzo, showing crushed cherries, orange zest, and scrub brush garrigue with mouthwatering acidity. Pair this lively red with anything chargrilled over wood fire or roasted on a spit.
