Varieties: 50% Garnacha Blanca and 50% Garnacha Gris. Appearance: Light golden hued. Nose: Clean, pronounced notes of white fruits and minerals. Palate: Dry and very clean. With the bright austerity of a mountain wine, fantastic racy acidity, and a finish that almost reminds us of a wine from Jerez. Vinification: From the rockstars in the Sierra de Gredos mountains and our friends, Comando G, comes the very RARE white wine that they produce. From a tiny vineyard of 0.2 hectares on sandy quartz and granite, El Tamboril is a remarkable example of how Spain has begun to redefine itself as capable of producing white wines that rival those of Germany and Burgundy. Hand harvested and whole cluster pressed directly into a 600 liter barrel, it remains in the same cask for its native fermentation and aging. It rests there for 14 months after which it is bottled directly from barrel. Like all of their wines, everything is done organically, biodynamically, and by hand (or foot!). Recommended Food Pairing: Anything from a big plate of oysters to very hard cheeses, to even something like tomato and tamarind chicken curry. Very versatile and impressive.
