Varieties: 80% Mencía, 20% Godello. Appearance: Medium plum hued. Nose: Quite fragrant, with lots of dark berries, earth, spice, and some deeper mineral components. Palate: Medium-light in body, with dark, silky blackberries and savory, meaty plum fruit, mingled with berry blossoms, graphite, minerals, bitter earth, moss, and flowers. Soft tannins and plenty of nice fruit make this delightfully easy to sip on all night long. Vinification: Laura Lorenzo was the winemaker and viticulturist at the venerable Dominio do Bibei for close to a decade before starting her tiny production of organic wines in Ribeira Sacra & Valdeorras, Galicia. From two south-facing parcels of young Mencía and Godello, one on granite and the other on a mix of gravel, clay, gneiss, quartz, etc. The grapes were harvested by hand, destemmed and fermented with wild yeasts in steel vats, and raised for 9 months in used 500 liter French barrels. Laura believes that adding 20% Godello brings freshness and acidity that Mencía can lack in warm vintages. The resultant wine is floral and mineral, with fine tannins and vibrant acidity. This wine is Spanish Côte-Rôtie! Recommended Food Pairing: Have this with a shiitake mushroom tortilla, with roasted poultry, or a warm and bubbly potato gratin with rosemary and sage.
