This is the Guimaro with less Mencia. Equal parts of Mencia, 30% Mencía and then equal parts of Caíño Redondo and Caíño Longo, Sousón, Brancellao and Merenzao. All the grapes ferment in troncoconic wood vats whole cluster together, maceration takes 50 days, and then ages for 10 months in big foudres. I can take some time for the wine to open, but once the wine starts to speak there are floral notes, there is juice, deep and complex, spicy. Perhaps is the vineyard south exposure or the young vines, but the fruit it is really beautiful in this wine.
