Variety: Tempranillo. Appearance: Clear. Dark ruby in color. Nose: Clean. Pronounced. Full of maturity, coffee & chocolate nuances, wild berries & a lightly toasted edge. Mildly raisiny and condensed. Creamy & sweet spices mingled with candied fruit aromas. Palate: Dry. Full-bodied. Tasty & delicate on the palate, elegant yet rounded; drinkable yet could be left to evolve slowly in bottle. Finishing with powerfully gripping tannins. Fruity, reminding one of candied red fruits. Long finish. Vinification: It has very limited production levels, and is only made in the very best vintages. From 80-100 year old vines planted in gravely & sandy limestone soil. Hand harvested & fermented in stainless steel. Aged 12 months in French oak. Recommended Food Pairing: Warm mushroom salad with ham & cured cheese; beans and vegetable stews.
